Vinification

Vinification: Merlot grapes, selected for their optimal ripeness, are subjected to a partial drying method before vinification. This targeted approach not only concentrates intense and complex flavors, but also strengthens the structure of the wine, giving it a distinctive aromatic richness.

On the other hand, Cabernet grapes are vinified according to the traditional method to fully preserve their unique varietal characteristics. The initial winemaking phase occurs separately for each grape variety, ensuring a tailored treatment that maximizes the expression of the terroir and specific qualities of the grape variety.

After alcoholic fermentation, the resulting wines are transferred to second passage French barriques for a long period of 36 months. During this refinement, the wood provides the wine with unique aromatic and structural complexity, while the tannins gradually integrate, giving the wine a distinctive elegance and softness that emphasizes its overall sensorial profile.

The final result, obtained after the blending of the wines, is a savvy wine that reflects the craftsmanship and care used in its production process. This wine not only promises remarkable potential for adaptation to aging, but also offers an extraordinary sensorial experience both immediately and over the years to come. The combination of modern and traditional techniques during winemaking and aging has produced a balanced and complex wine.

2020

Current Vintage

2020 is undoubtedly an unforgettable year, especially in viticulture. The minimal rainfall, fortunately occurring before March, created ideal soil conditions for budding, which commenced early in the third week of March. A remarkably uniform vegetative growth, bolstered by favorable climatic conditions, facilitated excellent flowering and the magnificent development of the berries. The weather in August was ideal for ripening, with mild and consistent temperatures prevailing until harvest time. Favorable conditions towards the end of the season allowed for the Merlot harvest in mid-September, followed by the completion of Cabernet Franc and Sauvignon harvests by the end of the first week of October. The 2020 harvest of ripe, top-quality grapes ensures that even after vinification and refinement in barriques, the wine will age gracefully, offering enduring and exhilarating complexity.
